Ethel’s Sugar Cookies
Mix thoroughly:
¾ cup soft shortening (part butter)
1 cup sugar
2 eggs
½ tsp, flavoring (vanilla or lemon or a combination)
2. Sift together and stir in:
2 ½ cups flour
1 tsp. baking powder
1 tsp. Salt
3. Chill for at least 1 hour
4. Roll out ⅛” thick and cut into shapes.
5. Bake 6-8 minutes at 400 degrees
6. Amount: 4 doz. 3” cookies
Sweet Sugarbelle Royal Icing Recipe
Ingredients:
1 pound confectioner’s sugar
3 tablespoons meringue powder
1½ teaspoons oil-free vanilla extract
½ cup warm water
Directions:
Mix vanilla with ¼ cup of warm water
Use a mixer to combine dry ingredients
Using a mixer on low setting, mix dry ingredients with the water/vanilla mixture, slowly adding it in
Continue mixing and slowly add remaining ¼ cup water one teaspoon at a time until icing reaches a thick, honey-like consistency (whole cup may not be used)
Mix on medium-high for 2-4 minutes until thick and fluffy icing with medium-soft peaks.
Amount: enough to frost 24-36 cookies
